Ingredients

How to make it

  • Put meat(no need to brown!), beans, tomatoes, tomato sauce, onions, garlic, peppers, and HALF of all seasonings in crock pot.
  • Cover and cook on low for 12-14 hours.
  • Remove lid and stir well. Add remaining half of spices and leave uncovered and continue to cook for a few more hours to thicken.
  • It should be cooked through, so now you'll just be melding the flavors and letting it thicken.
  • Taste once more before serving and reseason a bit more, if desired.
  • Serve with cornbread, green onions, sour cream and shredded cheese, if desired.
  • *this is not a fancy schmancy chili...it's just a basic, hearty, spicy but not burn your brain hot, homestyle chili...and the memories of being slightly unsure and just dumping everything in my mama's old crock pots(I had to use 2! :) and serving it to my family all those years ago as well as still having my daddy ask me to make it about this time EVERY year, are precious.

    okay so I didn't cook this as long as you wanted me too but I did do a total of about 10 hrs. I went ahead and browned the meat with the onions, garlic and peppers since i was cooking it shorter. The last hour I added the rest of the spices and took the lid off hoping it would help thicken it up...and it did! I used ground venison in this and served with some jalapeno corn bread! It was perfect! Thanks!

    Love you lady but turkey just don't cut it for me. Then again, I've had chili made with dog, cat, rat and Mistery meat. The meat has to have a bit of bite to it to make a decent chili. Otherwise I like the recipe a lot. Do we not all love chefmal? I think so. RJ

    Red wine vinegar? Interesting. You cooked this for 18 hours when you were 10? My gawd, that's crazy. When I was 10, that was tantamount to three weeks and I couldn't concentrate on anything longer than 18 minutes. lol This does sound really good, if a bit too hot for my palate. I think chili is a dad thing. My old man told me my sweet chili was the best thing he's ever tasted, but considering he eats rice pasta with plain tomato sauce from a can, that isn't saying much. I might try this one day if I ever get a crock pot, minus the hot chilis.
