How to make it

  • Preheat oven to 425'. Heat 1 TB EVOO in small skillet over med. heat. Add onion and two-thirds of the garlic and cook till softened,3 to 4 mins. Transfer to bowl to cool,then add the spinach and season with salt ,pepper and nutmeg.
  • Melt butter in the same pan,turn off the heat and add the panko,oregano and remaining garlic;toss.
  • Drizzle baking dish with remaining 1 TB oil. Split each chicken breast across (but not all the way through)and open like a book. Stuff with spinach and feta,letting stuffing overflow at the edges. Place the chicken pieces in baking dish and top with breadcrumbs. Bake till juices run clear,about 20 mins.

    This is a lovely recipe, Pat. I did not toast the breadcrumbs, rather I topped the chicken with them and then melted the butter & drizzled it over. The only thing I would do differently next time is salt & pepper the chicken before I stuff it & top it. Will be making this again, thanks!
