How to make it

  • Heat olive oil in pot over medium heat.
  • Saute the onion, celery, garlic and carrots, until onion becomes translucent.
  • Add chicken and chicken stock. Bring to a boil.
  • Add gnocchi and gently boil until they are done (about 3-4 minutes).
  • Add half and half and allow to heat through.
  • Add spinach and cook until just wilted.
  • Combine cornstarch and water to make a slurry, if using.
  • Bring soup to a gentle boil and add slurry, optional, a little at a time, until desired thickness is achieved.
  • Season with salt and pepper, if desired.
  • Serve and enjoy!
  • NOTE: This soup is a great use of leftover chicken, but in my case I just cooked chicken tenders that I seasoned with salt, pepper and garlic powder in the oven at 350 degrees for 20-30 minutes, until done. Also, you can find the gnocchi in the pasta section of your grocery store.

    I've made this before from AR, and again today from here. I guess I'm not the only one with dual-citizenship :) The first time I made this I was looking for one similar to Olive Garden's Chicken and Gnocchi soup. If you add just a tish of basil, this is it, only better.

    One of my daughters likes dumplings and food like gnocchi and one does not. The one that likes gnocchi was home this weekend and the other isn't, so I took this opportunity to make this soup for her. It's her favorite from Olive Garden.

    As you get to know me, you will learn that it is virtually impossible for me to follow a recipe exactly, either due to necessity or personal tastes. In the case of this recipe, I was forced to use frozen spinach. Other than that, I followed it as is simply because it's simple and fantastic at the same time. A tough combination to achieve :)

    So I HAD to make this after all the great reviews! Delicious! I did use store bought gnocchi and I had meant to just buy a rotisserie chicken for this but I forgot so I ended up baking a couple of chicken breast. Instead of shredding the carrot I left in chunks...this soup was the perfect thickness and flavor! Thanks!

    I have to agree...this was a great soup! I made my own gnocchi(Italian Gnocchi Triditional) and I cooked a whole chicken, as I do with traditional chicken and dumplings, so I used that stock as the base, and the chicken from that, just pulled. I added a few fresh Italian herbs because I had them, and I wanted to make sure to distinguish this from our similar southern dish to those eating it. :) It worked out great! I also went pretty heavy on the pepper. I used cream rather than half and half, and the texture was fantastic! I doubled this, and it, and a nice salad, served 8 of us, with just a bit left over. I added my pic. Thanks to you and lil Colander Boy G for a great recipe! :)

    This is very yummy! Kind of like chicken pot pie. I used chicken that I poached in chicken stock seasoned with Mrs. Dash original. I didn't have spinach so left it out. I also added some Mrs. Dash seasoning to the soup and about 2 tbsp cornstarch.
