Wes's Meatballs

Wes has these meatballs in a cookbook he published,The Miller Family cookbook. These are the only ones I make anymore
Ingredients
- 1 lb ground chuck shopping list
- 3 eggs shopping list
- 1 c Italian bread crumbs shopping list
- 1/2 c pecorino romano cheese,grated shopping list
- 2 garlic cloves,minced shopping list
- 1 med. onion,finely diced shopping list
- 1/4 c fresh parsley,chopped shopping list
- 1 tsp salt shopping list
- 1 tsp pepper. shopping list
- Preheat oven to 350' shopping list
- Combine all ingredients in a large bowl. Blend together using both hands till the ingredients are well mixed,about 5 mins. shopping list
- Make 1-1/2 to 2" meatballs out of the mixture. Put finished meatballs on baking sheet. shopping list
- When all meatballs are rolled,put in oven and cook for 20 to 25 mins. shopping list
- When done,put in large pot of fresh made sauce and simmer 1 hour.. As an alternative to baking,place uncooked meatballs directly into a pot of just made gravy and simmer,covered 2 to 3 hours. This is my preferred method... shopping list

These meatballs were fantastic. I cooked them in another sauce and served them over rice. I got 30 meatballs from this. More here
