How to make it

  • Cookie Dough

  • Cream butter and sugar. Add eggs, vanilla, and peanut butter. In a separate bowl mix flours & baking powder. Slowly add dry ingredients to wet, mixing well to incorporate. Wrap in plastic and refrigerate for at least 3 hours.
  • Preheat oven to 375F. Line baking sheet with parchment paper. Divide cookie dough into 20 equal portions. (You may have to let it sit out for a few minutes until it's easier to work with.) Roll each section into a ball. Place ball on baking sheet and flatten with your palm. Then use a fork to flatten a bit more. The cookies will not spread much but do leave a bit of room between them. Bake for 10 minutes. Move to rack to cool.
  • Filling

  • Combine all ingredients. Mix well. Once cookies are cooled, spread filling on bottom of one cookie & top with another. Repeat until you have 10 sandwiches.
  • Store in an airtight container.

    Decadent! Alternative on the filling would be to mix the cream cheese with some concord grape jam. Just a thought I had :)
