Nutter Betters Pb Sandwich Cookies

cookie Dough
- 1/2 cup butter, room temperature shopping list
- 1/2 cup sugar shopping list
- 1/2 cup brown sugar shopping list
- 1/2 tsp vanilla shopping list
- 1 tsp baking powder shopping list
- 1 egg shopping list
- 3/4 cup white flour (unbleached) shopping list
- 1/2 cup whole wheat flour shopping list
- 1/2 cup crunchy peanut butter shopping list
Filling
- 2 oz. cream cheese, softened shopping list
- 1/3 cup smooth peanut butter shopping list
- 1/2 tsp vanilla shopping list
- 1 cup powdered sugar shopping list
- 1 1/2 tbsp milk shopping list
How to make it
Cookie Dough
- Cream butter and sugar. Add eggs, vanilla, and peanut butter. In a separate bowl mix flours & baking powder. Slowly add dry ingredients to wet, mixing well to incorporate. Wrap in plastic and refrigerate for at least 3 hours.
- Preheat oven to 375F. Line baking sheet with parchment paper. Divide cookie dough into 20 equal portions. (You may have to let it sit out for a few minutes until it's easier to work with.) Roll each section into a ball. Place ball on baking sheet and flatten with your palm. Then use a fork to flatten a bit more. The cookies will not spread much but do leave a bit of room between them. Bake for 10 minutes. Move to rack to cool.
Filling
- Combine all ingredients. Mix well. Once cookies are cooled, spread filling on bottom of one cookie & top with another. Repeat until you have 10 sandwiches.
- Store in an airtight container.
