Roasted Garlic Aioli

- 1 Head garlic shopping list
- 1/2 c. low fat mayonnaise shopping list
- 1/4 c. hot and spicy mayonnaise shopping list
- juice of 1/2 lemon shopping list
- 1/2 tsp. cayenne pepper, or to taste shopping list
- Dijon mustard, to taste shopping list
- fresh pepper, to taste shopping list
How to make it
- Cut top off garlic head. Place on a double square of foil, drizzle with a little olive oil, close foil to form a packet and roast at 350 degrees till golden, and garlic is soft, about 30 minutes.
- Squeeze garlic into food processer, with remaining ingredients. Combine well.
- Season, and chill to blend flavors.

I made this to go with sweet potato fries, as you suggested. I used about 1 1/2 heads garlic and all (full fat) organic mayo as I did not have hot & spicy. I also don't have a processor, so I just blended the garlic in with a fork. This is very d...more
