Cayce's Chicken Nuggets

- olive oil, just enough to fill the skillet shopping list
- 11/2 lb chicken breast, cut in bite size pieces shopping list
- Bit of your favorite tenderizer, if you have it. Mom usually has Adolfs, no seasoning shopping list
- 1/2 small onion, chopped shopping list
- 2 garlic cloves ( at least, mom says the more the merry, but that's just my mom!) minced shopping list
- 2 eggs, beaten shopping list
- Italian style bread crumbs shopping list
How to make it
- heat oil in skillet, I like to use the electric skillet
- sprinkle chicken with tenderizer, if you want to
- dredge (new word for me that mom said I should use) chicken pieces in egg then bread crumbs
- meanwhile cook onions and garlic for a few minutes, until you just "smell them"
- add chicken pieces and cook about 7 minutes or so. (until juices run clear, again....according to mom) and they are crispy on the outside but tender on the inside.
- Serve over noodles of your choice and enjoy!

This had a very nice flavor to it. I had a bunch of green onions I wanted to use up so that is the onion I used. I wanted to serve these on wide egg noodles, but it turned out I didn't have any so I had to use spaghetti. I think this would be nice...more
