- 1lb dry rice or curly noodles shopping list
- 2T olive oil shopping list
- 4 cloves garlic, minced shopping list
- 1/4-1t red pepper flakes shopping list
- 12oz fresh mushrooms, large diced shopping list
- 2 medium bell peppers, large diced shopping list
- 1 cup sliced water chestnuts shopping list
- 1 cup sliced bamboo shoots shopping list
- about 1 cup sugar/snap peas shopping list
- 2 cups fresh bean sprouts shopping list
- 4 green onions, sliced shopping list
Sauce
- 2T oyster sauce shopping list
- 1T worcestershire sauce(can sub soy, if desired) shopping list
- 1t soy sauce shopping list
- 1T peanut butter shopping list
- juice from 1 small lime shopping list
- 1/3 cup chicken or veggie stock shopping list
- 2T sweet Thai chili sauce shopping list
- 2T hot Chinese sauce shopping list
- kosher or sea salt and fresh ground pepper shopping list
- fresh cilantro for garnish shopping list
- chopped peanuts for garnish shopping list
How to make it
- Soak noodles in hot water while prepping other ingredients.
- Combine all sauce ingredients, whisking well, and set aside.(salt only as needed, depending on how much soy sauce used)
- Heat a wok or similar pan over medium high heat. Add oil, garlic, red pepper flakes, mushrooms and peppers and cook, stirring constantly, for about 5-7 minutes.
- Add a few drizzles of stock, if needed, if the wok gets too dry.
- Add noodles and sauce and toss well.
- Continue cooking for a couple of minutes.
- Add remaining ingredients and cook just to heat through.
- Serve immediately with fresh cilantro and chopped peanuts, if desired.
