How to make it

  • Preheat oven to 375F.
  • Butter the baking dish well - (I used a deep dish pie pan to avoid any spill-overs)
  • Arrange the sliced nectarines in the dish.
  • Whisk the eggs and honey together till smooth. Add milk and flour (mix them together before adding to the egg/honey) and whisk until smooth again.
  • Slowly pour over the fruit, making sure that the fruit is not completely submerged under the batter.
  • Bake 30-40 minutes (or until a knife inserted in the custard comes out clean)

    I've never made anything like this before and wasn't sure what to expect. It certainly was easy and delicious! I really like it the next day cold. It seemed like I could really taste some honey then as well. I had more than 1-1/2 cups of nectarines because I had this huge nectarine and I didn't want to waste any of it. Added my picture, too!

    Really yummy! First of all to ensure that the nectarines stuck to the bottom I pressed them down firmly and made sure none of them overlapped. Still a couple didn't make it all the way up, but most did ;) I also had a little trouble with my flour staying a little clumpy. So I started whisking like a mad woman and it eventually smoothed out. Mine was done after 30 minutes exactly. I am not usually a custardy/flan person because of the texture but this was great! Maybe I like it now and didn't know, since it's probably been 5 yrs since I've tried any. So glad I made this!
