South West Style Beans

- 1 can black bean, drained shopping list
- 1 can white kidney beans, undrained shopping list
- 1 cup frozen or fresh corn shopping list
- 1 roasted red pepper, chopped shopping list
- couple T olive oil shopping list
- 1 large onion, chopped shopping list
- 3 cloves garlic, minced shopping list
- 1/4 cup molasses shopping list
- 2T whole grain mustard shopping list
- 1t dry mustard shopping list
- couple T honey shopping list
- about 14oz tomato sauce(I used spicy) shopping list
- 1-3 chipotle peppers, minced shopping list
- about 1T adobo sauce(or all of what's in the can...;-) shopping list
- dash of liquid smoke if not cooking on a charcoal grill shopping list
- kosher or sea salt and fresh ground black pepper shopping list
How to make it
- In high heat proof skillet or dutch oven(cast iron is best), saute onion in the olive oil over medium heat until just tender.
- Add garlic and cook about 2 more minutes.
- Add all remaining ingredients and stir well.
- Heat on grill or in 400 oven for about 45-60 minutes until heated through and thickened.
