Build A Better Burger-secret Sauce

- The meat: 80% lean, 20% fat, freshly ground chuck, not frozen shopping list
- 1 1/2 lbs per 4 burgers- approx 6 oz meat for each patty shopping list
- No fillers, herbs, onion or seasonings needed in meat shopping list
- The cheese if desired: American cheese, melts nicely- molten and seeping into the crags of the crisp patty, use no other fancy shopping list

- The bun: soft yet sturdy and slightly sweet, like the potato bun- a moist warm wrapper for the meat shopping list
- The lettuce leaf : crisp like iceburg, won't get soft and soggy shopping list
- The onion slice : lay on the roll then add the hot burger it's fat soften the onion shopping list
- The tomato slice: ripe and juicy shopping list
- The pickle: briny, crisp and dill, nothing sweet, adds pucker and punch to the rich burger shopping list

- 1/2 cup mayonnaise shopping list
- 2 Tbs ketchup shopping list

How to make it
- Shaping the burgers: be gentle, lightly form a patty with cupped palms, 3/4 inch thick, about 4 inch patty; loosely formed is fine
- Make a small indentation in center with thumb because burgers contract when cooked and this helps them keep flat
- Season with salt and pepper- grill seasoned side down, then season the other side as you turn them
- Do not press on them with a spatula, this causes them to lose valuable juices
- Cook: gas grill with high heat or charcoal grill to medium high heat
- Grill: lightly charred about 4 minutes per side for medium rare
- Transfer burgers to buns
- Compose the burgers:
- Onion on the bottom of the bun, burger,cheese, lettuce, tomato, sauce
- Let stand 3 minutes before serving
