How to make it

  • Season the cod with salt and pepper. Heat the oil over medium heat in a large non-stick skillet until shimmering. Add the cod, presentation side down. Cover and cook without moving until the fish is cooked through, about 15 minutes or until meat flakes easily with a fork. Serve crispy side up.
  • You may want to check your fish at 10 minutes. Mine was done at 12. It will depend upon the thickness of your filets.
