Blueberry Orange Bread

this bread always reminds me of my friend Ann.. we would sit and have this and a cup of coffee.
Ingredients
- 2 Tbsp butter shopping list
- 1/4 cup boiling water shopping list
- 2/3 cup orange juice shopping list
- 4 Tbsp orange rind shopping list
- 1 egg shopping list
- 1 cup sugar shopping list
- 2 cup flour shopping list
- 1 teasp. baking powder shopping list
- 1/4 teasp baking soda shopping list
- 1/2 teasp salt shopping list
- 1 cup blueberries shopping list
- 2 Tbsp honey shopping list
How to make it
- melt butter in boiling water then add 1/2 cup orange juice and 3 Tbsp orange rind
- beat egg and sugar until fluffy in large bowl
- mix dry ingredients together
- add dry ingredients to egg mixture. mix until moist
- add orange mixture and then fold in blueberries
- bake at 325' approx 1 hour in a greased loaf pan
- mix 2 Tbsp orange juice, 1 Tbsp orange rind and 2 Tbsp honey together.. pour over the top of the warm bread.
