Ingredients
  • 1 1/2c plum tomato, chopped
  • 2T parsley, minced, fresh
  • 1T kalamata olives, pitted, chopped
  • 1T white wine vinegar
  • 1t dijon mustard
  • 1/2t olive oil
  • 1/8t salt
  • 1/8t black pepper
  • 1 small garlic clove, minced
  • 1 (14.8 oz) jar hearts of palm
  • 1 1/2c bibb lettuce leaves, thinly sliced
  • 1t parmesan cheese, freshly shredded

Directions
  1. Place first 9 ingredients in a medium bowl; toss gently to combine. Remove 3 hearts of palm from jar; reserve remaining hearts of palm for another use. Dice one heart of palm; add to tomato mixture. Cover and chill at least 2 hours.
  2. Cut remaining hearts of palm in half lengthwise. Arrange 2 hearts of palm halves, 3/4 cup lettuce, 3/4 cup tomato mixture on each of 2 salad plates. Top each serving with 1/2 teaspoon cheese.
  3. 66 calories per serving; 40% from fat.

Right up my alley. We used to eat "heart of palm" fresh from the trees off my grandmother's place when I was a kid. Called it swamp cabbage. So good.
