Warm Butter Bean And Sage Bruschetta

- Bruschetta: shopping list
- French bread- Sliced thick shopping list
- 2 cloves garlic shopping list
- extra virgin olive oil shopping list
- Spread: shopping list
- 4 tablespoons extra virgin olive oil shopping list
- 1/2 small onion, finely chopped shopping list
- 1 tablespoon fresh sage shopping list
- 1 teaspoon grated lemon peel shopping list
- 1 14 oz can butter beans (can substitute canned lima or fava beans) shopping list
- 6 tablespoons of juice from can of butter beans shopping list
- 1 teaspoon lemon juice shopping list
- pinch cayenne pepper shopping list
How to make it
- Bruschetta
- Toast bread on both sides under a broiler.
- While still hot rub both sides of bread all over with garlic.
- Drizzle with small amount of olive oil.
- Spread
- Heat oil in a skillet and fry the onion, garlic, sage, and lemon peel for 5 minutes until soft but not golden.
- Add the beans, with about 6 tablespoons of their liquid, the lemon juice, and cayenne.
- Cover and simmer gently for 5 minutes.
- Mash the beans with a potato masher to form a rough paste.
- Season to taste.
- Spread on warm bruschetta and serve immediately.

I know this as "Bruschetta con Fagioli", and I love it! Great to serve with some tomato & basil bruschetta mixed in on the platter! Great post!
