How to make it

  • Bruschetta
  • Toast bread on both sides under a broiler.
  • While still hot rub both sides of bread all over with garlic.
  • Drizzle with small amount of olive oil.
  • Spread
  • Heat oil in a skillet and fry the onion, garlic, sage, and lemon peel for 5 minutes until soft but not golden.
  • Add the beans, with about 6 tablespoons of their liquid, the lemon juice, and cayenne.
  • Cover and simmer gently for 5 minutes.
  • Mash the beans with a potato masher to form a rough paste.
  • Season to taste.
  • Spread on warm bruschetta and serve immediately.

    Bruschetta is something I make often this sounds really good. I like sage with those beans, I will have to try this.
