- 1 lb penne shopping list
- 3 zucchini shopping list
- 2 onions shopping list
- 2 tomatoes shopping list
- 2 red apples shopping list
- 3 pepperoncini shopping list
- 7 Tbsp extra-virgin olive oil shopping list
- 10 leaves basil shopping list
- 1 Tbsp chopped parsley shopping list
- salt & pepper. shopping list
How to make it
- Cut the zucchini, onions, tomatoes, apples, and pepperoncini into small cubes.
- Put th ecubes in a blender and reduce to a puree, adding oil to get the proper creamy consistency.
- Season with salt & pepper, chop the basil and parsley, and blend into the puree.
- Pour into a large bowl.
- Cook the pasta, and set aside several tablespoons of the water when draining.
- Combine the penne with the sauce, and stir in a coupl etablespoons of water.
- Serve immediately.
