A late summer penne dish featuring apples in the sauce

Ingredients
  • 1 lb penne
  • 3 zucchini
  • 2 onions
  • 2 tomatoes
  • 2 red apples
  • 3 pepperoncini
  • 7 Tbsp extra-virgin olive oil
  • 10 leaves basil
  • 1 Tbsp chopped parsley
  • salt & pepper.

Directions
  1. Cut the zucchini, onions, tomatoes, apples, and pepperoncini into small cubes.
  2. Put th ecubes in a blender and reduce to a puree, adding oil to get the proper creamy consistency.
  3. Season with salt & pepper, chop the basil and parsley, and blend into the puree.
  4. Pour into a large bowl.
  5. Cook the pasta, and set aside several tablespoons of the water when draining.
  6. Combine the penne with the sauce, and stir in a coupl etablespoons of water.
  7. Serve immediately.
