How to make it

  • Preheat oven to 350
  • Spray baking pan with nonstick olive oil cooking spray
  • Rinse fillets in cool water, paper towel lightly to dry
  • Place fillets skin-side down on pan
  • Drizzle lemon juice onto fillets or sprinkle them with TrueLemon*
  • Brush with the olive oil and dust a little lemon pepper seasoning on the fillets
  • Pat breadcrumbs, salt and pepper and a little more lemon pepper seasoning onto fillets, making a light crust with the breadcrumbs and seasoning
  • Bake fish for 20-30 minutes until its nice and flaky
  • Add leftover lemon juice to the fish, spooning any juice in pan back onto fish
  • Season with more salt & pepper and lemon pepper seasoning if you desire (I sometimes like extra lemon pepper seasoning on mine!)
  • Garnish with parsley
  • Enjoy!
  • NOTE: *TrueLemon is a crystallized lemon juice. I use it along with fresh lemon juice sometimes. But it certainly suffices alone. Because of how quickly produce goes bad & the fact that I tend to make this dish on a whim, it's a great option for me! For the purists out there, I just wanted to say it's 100% pure, natural lemon juice/oils that have been crystallized. Nothing else. I love it because it is all natural, contains no artificial flavors or sweeteners, no preservatives or sodium, has 0 calories, contains Vitamin C, & is easy to use, especially when you're out of fresh lemons! One packet = 1 wedge of lemon.

    Will have to give this a try, halibut is plentiful up here. In fact I have a couple fillets in the the freezer. Great post:o)
