Ingredients

How to make it

  • Heat oven 350 degrees
  • prepare oven-proof pyrex 9x13 pan by placing release foil on bottom
  • prepare breasts in this manner:
  • wash 3 times
  • pat dry
  • place on cutting board
  • with a sharp knife cut lengthwise 1/2 inch slits but not deep to bone
  • melt butter in micro
  • remove and add all spices and mix
  • place breasts in cooking pot
  • pour butter mixture carefully to get in all slots
  • Add Shirleyoma's roasted garlic to slots
  • place pancetta on top (2 pcs on each)
  • Roast 30 min.
  • Broil 2 minutes at end
  • Let rest a few minutes
  • Serve ; pouring juices from pan over breasts.

    Joymarie: This recipe rocks! We love chicken and after a while, it ends up being the same thing...well not this time-my husband is crazy about it. I did a side dish of basmati brown rice and we did brussel sprouts...it was awesome..again, thanks for your great nose. I used pancetta instead of bacon-it was worth the trip to the store...**GRIN**Thanks for a great post!

    Oh! I bet you could use either deli ham or bacon if you didn't find the pancetta!

    Ok. Did this one and I just have to say: WOW!!! Got the pancetta from the deli case. I served this with the sauce over long grain/white rice blend.
    This one's worth the trip, y'all!!

    This sounds incredible..all those spices and butter too! I am going to have to use bacon instead of pancetta as that is what I have on hand. I will be doing this for dinner tonight..thanks for a great post..and for your good nose***GRIN***!

    Invented this last night jo jo...smelled so good when it was cooking and my husband kept saying...this is so good...this so good...is it Sunday? Made me laugh! Don't you think that the best recipes are made from just ingredients you have on hand?
