This recipe is very time consuming, but very good to make at Christmas or other special occasion

Ingredients
- 1 egg
- 4 c powered sugar (icing sugar)
- 1/3 c corn syrup (light)
- 1/2 tsp pepperemint extract
- cornstarch for dusting
- 1 16 oz bag chocolate chips
Directions
- In a med. bowl beat egg white until it is stiff and forms peaks
- Slowly add the sugar using an electric mixer
- Add the corn syrup and peppermint extract
- Knead mixture with your hands until it has the smooth consistency of dough
- Using a rolling pin dust with cornstarch and roll out dough 1/4 inch thick
- Punch out circles of peppermint dough using a cutter or can with a diameter of about 2-21/2 inches
- Place in fridge to firm up(45 mins.)
- Melt the chocolate chips in the microwave set on high for 2 mins. stirring halfway through the heating time
- Drop each patty into the chocolate and coat completely
- Using 2 forks(one in each hand) lift out of the chocolate and place on wax paper
- Chill peppermint patties until firm (about 30 mins)
- Makes about 20 patties
