How to make it

  • Heat oil in a large skillet and brown the roast about 10 minutes, turning occasionally, until browned. Place vegetables and broth in the crockpot. Place browned beef on top of vegetables.
  • Mix together horseradish, garlic, salt and pepper in a small bowl and spread over the beef evenly.
  • Cover slow cooker and cook on low heat for 8-10 hours until everything is tender. No stirring needed.
  • Serve with hunks of crusty bread, like a baguette.
  • Serves 8

    Really good! Nice twist on pot roast. Hubby loved horseradish,(and he's NOT a spicy food person) it's not hot, just good flavor... we all loved the juice for bread sopping!

    I'm making this today....I tried it about 2 months ago and OMG, it was possibly the best pot roast I'd ever had. The garlic and horseradish definitely mellow out during cooking. It was succulent, tender, tasty. There just aren't enough adjectives to describe it. My mouth is watering just thinking about it.

    This was wonderful to come home to after a long day at work. It smelled great when I walked in the door. The vegetables cooked perfectly in the chicken broth and the roast was sitting on top of them and not in the liquid. The horseradish/garlic mix was great on the potatoes, too. I'm looking forward to the leftover roast and onions on sandwiches this weekend. A perfect dish. Thank you!
