Got the original idea from my friend, Donna, and added a few things to it.

Ingredients
- Olive Oil
- Margarine/Butter
- 3 eggs, beaten
- 4 dashes hot sauce
- 1/2 c. flour
- 1/2 c. cornmeal
- 1/4 t. cayenne pepper
- Seasoned salt
- 4 - 6 med/large green tomaotes, sliced medium
- 1 yellow squash, sliced medium
- 1 zuchinni, sliced medium
- 1 med. white onion, rough chopped
- 1 tub fresh mushrooms, sliced thick
- 1 red pepper, rough chopped
- 2 T. chopped garlic
- 2 roma tomatoes, chopped (less water)
- 1 cup shredded parmesan
- Fresh Ground Black Pepper
Directions
- Beat eggs with hot sauce, set aside
- Combine flour, cornmeal, cayenne pepper and seasoned salt
- Add about 3 T. extra virgin olive oil to large skillet and add a pat of margarine
- When heated, add onion and red pepper
- While onion and pepper are sauteing, dredge zuchinni, squash, green tomatoes and mushrooms in eggs then flour mixture
- Add to pan
- Add Garlic
- Fry until desired brown-ness, turning infrequently
- Drain on paper-towel lined plate
- Add chopped roma tomatoes and fresh grated parmesan cheese
