This is a very plain muffin recipe but it is surprising the number of flavours you can add to it.

Ingredients
  • 1 cup whole wheat flour
  • 1 cup All-Purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup skim milk
  • 1/2 tsp. vanilla
  • 1/4 cup molasses
  • 1/4 cup unsalted margarine, melted & cooled
  • 1 egg beaten
  • Vegetable cooking spray
  • Note: I like to add raisins(soaked in boiling water and drained) or chopped dates or semi-sweet chocolate chips. Blueberries or strawberries work well, chopped peaches or one banana mashed. I have even turned this muffin recipe into a ginger muffin by adding 1/2 teaspoon ground ginger and chopped sugared ginger. You can add 1 teaspoon of wheatgerm if you are looking for a health kick muffin. Use your imagination ;-)

Directions
  1. Combine first 4 ingredients in a large bowl, stirring well.
  2. Make a well in center of flour mixture.
  3. Combine milk, vanilla, molasses, margarine & egg, add to dry ingredients, stirring just until dry ingredients are moistened.
  4. Spoon batter into muffin tin coated with cooking spray, filling 2/3 full.
  5. Bake at 400 F. for 20 mins. or until lightly browned.

Thanks, Bill"
Hi Bill, quite honestly I've never thought about suing skim milk but maybe you've got a point LOL You know Bill, you can use 1% or 2% but I wouldn't go as far as using homogonized. Thanks for asking ;-) Cheers!

Oh Lor, how did you know I would love this???

OM... let's just say I knew ;-)

Molasses in muffins is the perfect ingredient. Thanks for a new and exciting muffin recipe.

This tastes like a health muffin. Minimally sweet. And as advertised, a plain tasting muffin.

I added strawberries and 4 ground up oatmeal/white chocolate cookies for flavoring.

Think I would prefer a more definitive tasting muffin but it is good as a health muffin.

I love healthy muffins! I've been using a basic muffin recipe from this site. In that recipe I reduced the sugar and oil in half and it was still very good!

There always seems to be someone lurking in this group recipe crowd who feels it necessary to add their sour opinions. As it is mentioned, the muffin is PLAIN. I did give suggestions to "spruce" up the flavour. My question is, if you were looking for a more exciting muffin, then why even consider this one? I can't imagine adding ground up oatmeal/white chocolate cookies for flavouring - YUCK :P
