Ingredients

How to make it

  • Combine first 4 ingredients in a large bowl, stirring well.
  • Make a well in center of flour mixture.
  • Combine milk, vanilla, molasses, margarine & egg, add to dry ingredients, stirring just until dry ingredients are moistened.
  • Spoon batter into muffin tin coated with cooking spray, filling 2/3 full.
  • Bake at 400 F. for 20 mins. or until lightly browned.

    There always seems to be someone lurking in this group recipe crowd who feels it necessary to add their sour opinions. As it is mentioned, the muffin is PLAIN. I did give suggestions to "spruce" up the flavour. My question is, if you were looking for a more exciting muffin, then why even consider this one? I can't imagine adding ground up oatmeal/white chocolate cookies for flavouring - YUCK :P

    I love healthy muffins! I've been using a basic muffin recipe from this site. In that recipe I reduced the sugar and oil in half and it was still very good!

    This tastes like a health muffin. Minimally sweet. And as advertised, a plain tasting muffin.

    I added strawberries and 4 ground up oatmeal/white chocolate cookies for flavoring.

    Think I would prefer a more definitive tasting muffin but it is good as a health muffin.

    Hi Bill, quite honestly I've never thought about suing skim milk but maybe you've got a point LOL You know Bill, you can use 1% or 2% but I wouldn't go as far as using homogonized. Thanks for asking ;-)
