Hi Bill, quite honestly I've never thought about suing skim milk but maybe you've got a point LOL You know Bill, you can use 1% or 2% but I wouldn't go as far as using homogonized. Thanks for asking ;-) Cheers!

I added strawberries and 4 ground up oatmeal/white chocolate cookies for flavoring.
Think I would prefer a more definitive tasting muffin but it is good as a health muffin.

There always seems to be someone lurking in this group recipe crowd who feels it necessary to add their sour opinions. As it is mentioned, the muffin is PLAIN. I did give suggestions to "spruce" up the flavour. My question is, if you were looking for a more exciting muffin, then why even consider this one? I can't imagine adding ground up oatmeal/white chocolate cookies for flavouring - YUCK :P
