This is a unique twist on pot roast that my girlfriend Donna makes.

Ingredients
- 1 1/2 C Thick and Chunky Salsa
- 1 Cup Beer
- 1 Can (6oz) Tomato Paste
- 1 pkt Taco Seasoning
- 3 LB Boneless Beef Bottom Roast
- 1/2 tsp each salt and pepper
- 2 T Peanut Butter
- 1/3 Cup Chopped Cilantro
Directions
- Mix first 4 ingredients and pour in a 5 qt Slow Cooker. Rub beef with Salt and Pepper - add to slow cooker. Spoon some sauce over meat, cover and cook on low for 8-10 hours.
- When the meat is cooked through, remove it to a cutting board and slice against the grain. Let stand
- Add Peanut Butter to the crockpot and stir to incorprate.
- Place meat on plates, top with sauce and sprinkle with Cilantro. Serve immidiately.
