A really nice flavor combination and wicked easy to make. This is not a traditionally thick chowder, it's really more like a soup but can easily be made thicker.

Ingredients
  • 1 ½ C cubed unpeeled red potatoes
  • ½ cup water
  • 1 ½ C cut asparagus ( 1 ½ “ pieces)
  • 1 ½ C cubed cooked ham
  • 1 can condensed Healthy Request cream of mushroom soup
  • 2 Cup ½ & ½ or light cream
  • 4 tsp cornstarch and water (optional)
  • freshly ground pepper

Directions
  1. In a 2 quart saucepan, heat potatoes & water to boiling. Reduce heat to mediun. Cover; cook 3 to 5 minutes or until potatoes are crisp-tender
  2. Add asparagus and ham. Cover; cook 3 to 5 minutes or until heated through and potatoes are tender (do not overcook)
  3. Stir soup and ½ & ½ together and stir into mixture
  4. If a thicker chowder is desired, whisk the cornstarch together with a little cold water (just enough so you can pour it) and stir into the soup.
  5. Cook, stirring for 2 minutes or until thickened
  6. Heat through
  7. Sprinkle with pepper before serving
