Ham And Asparagus Chowder

- 1 ½ C cubed unpeeled red potatoes shopping list
- ½ cup water shopping list
- 1 ½ C cut asparagus ( 1 ½ “ pieces) shopping list
- 1 ½ C cubed cooked ham shopping list
- 1 can condensed Healthy Request cream of mushroom soup shopping list
- 2 Cup ½ & ½ or light cream shopping list
- 4 tsp cornstarch and water (optional) shopping list
- freshly ground pepper shopping list
How to make it
- In a 2 quart saucepan, heat potatoes & water to boiling. Reduce heat to mediun. Cover; cook 3 to 5 minutes or until potatoes are crisp-tender
- Add asparagus and ham. Cover; cook 3 to 5 minutes or until heated through and potatoes are tender (do not overcook)
- Stir soup and ½ & ½ together and stir into mixture
- If a thicker chowder is desired, whisk the cornstarch together with a little cold water (just enough so you can pour it) and stir into the soup.
- Cook, stirring for 2 minutes or until thickened
- Heat through
- Sprinkle with pepper before serving

Yummm, I must try this. My mom just gave me a dozen bags of asparagus frozen from this years crop.
