How to make it

  • Heat the oven to 375°F and arrange the rack in the middle.
  • Rinse beets and trim off any leafy tops.
  • Wrap beets in aluminum foil and place in oven.
  • Roast until tender and easily pierced with a knife, about 1 hour. Remove from oven and let cool.
  • When beets are cool enough to handle, peel using a paring knife or by pushing the skin with your fingers.
  • Slice beets, drizzle with olive oil, and season with salt and freshly ground black pepper.

    I've made this for dinner a few weeks ago. So sweet, all I used was some sea salt.

    perfect! the beets were so tender and flavorful, they didn't even need the salt and pepper or olive oil, but were EXTRA delicious after i drizzled 'em. i baked them for exactly an hour and they were perfect.

    Yay, this is just what I was looking for! Bought them because they were there in the market (& you never see fresh beets). I know they're so good for you, but had NO idea what to do with them. Now I know - and the bonus is it's easy! Thank you.
