I always grate in a carrot to reduce acidity with out sugar when I make my sauce homemade, I know the jarred stuffis loaded with sugar, but I still toss in the carrot to give it more of a homemade taste.

The real Italian "sugo" is also made with the carrots. They use the "soffritto" which is finely diced celery, carrot and onion and fry that up before adding everything else ;) This sounds good... what exactly is Italian sausage meat?

Sorry about the 'sausage meat'. I get it from my butcher. It is just the sausage mixture with out the casing. If you can't get it that way, just buy the actual sausage and remove the casings.

Yep.. the carrot helps sweeten the sauce.. If your trying to hide it... grate.. that way they can't see it!
