Ingredients

How to make it

  • Combine chicken broth and both rices in a medium saucepan. Bring to a boil over medium heat. Reduce heat to low, cover and simmer 45 minutes or until rice is tender and the liquid is absorbed.
  • Meanwhile, melt butter in skillet over medium heat. Add onions and brown sugar. Cook 6 minutes or until liquid is absorbed and onions and soft and translucent. Reduce heat to low. Slowly cook onions, stirring often, for 25 minutes or until they are caramel color. Stir in sweetened, dried cranberries.
  • Cover and cook over low heat for 10 minutes or until cranberries swell. Gently fold cranberry mixture and orange zest into cooked rice. Yummmmmmeeeee!

This sounds good. I'm wondering if it would be as good it I tossed it with some brown rice, too.

i make this very similar but haven't done the carmelized onions or orange zest and usually use a wild rice blend. then i stuff it in a trout and grill it. it is soo yummy. i definately would like to try this with the zest.

I am always looking for new ways to prepare wild rice - this sounds very interesting, and I will have to make this for us. I think the cranberries and carmelized onion would give the wild rice such a great flavor - thanks for sharing this. Nice holiday table idea, too - always nice to have a new side dish to show off!!
