King Of Leftovers Turkey Soup Recipe
The superlative way to end the Thanksgiving holiday, and put that bird to rest.

Ingredients
  • 1 meaty Turkey carcass, broken into pieces, the meatier the better.
  • 10 cups water
  • 2 ½ cups leftover turkey stuffing
  • 2 cups leftover turkey gravy
  • 3 carrots, thickly sliced
  • 3 stalks celery with leaves, sliced
  • 1 onion chopped
  • ½ cup chopped parsley or 2 T parsley flakes
  • 2 bay leaves
  • 2 t. dried thyme
  • ½ cup cream sherry
  • Salt to taste
  • Tabasco sauce to taste

Directions
  1. Put all the ingredients into a large soup pot over medium heat. Stir to break up and blend the stuffing. Bring to a boil and then lower heat. Simmer around 1 ½ hours. You may need to add more water if the soup is too thick. Adjust seasonings.

Sounds good, all I have left now is the turkey meat, I've already used my turkey carcass for Turkey and Rice Soup. Great post though.


This sounds like a nice way to use up the leftover bird. I think I will do this tonite.

I made this last night without the stuffing, I added egg noodles instead. Great way to use up the rest of the Turkey.


I definitely want to try this but I plan to use Marsala instead of Cream Sherry.

I use Marsala alot too. And Madeira. They will change the color of the soup more than sherry though.
