Shindigs Retro Roast

- 1 beef pot roast 1.5 – 3 lbs. shopping list
- baby red potatoes (I use a lot 15 - 20) shopping list
- Rainbow carrots cut into pieces (Trader Joe’s) or baby carrots shopping list
- 1 red onion cut into large chunks shopping list
- salt/pepper to taste shopping list
- 2 garlic cloves chopped shopping list
- beef broth/water to cover shopping list
- Bay leaf shopping list
- Red, Yellow, or Orange bell pepper cut into rings shopping list
- seasoning to taste: I make my own dry blend shopping list
- basil shopping list
- rosemary shopping list
- thyme shopping list
- paprika shopping list
- ginger shopping list
- white pepper shopping list
How to make it
- After chopping up the carrots/onion, place the potatoes, and carrots on the bottom of the Crock Pot.
- Put a light dusting of your seasoning over them and add the garlic.
- Place the roast on top of the veggies, dust the meat with seasoning
- Pour the Broth/Water carefully around the edges half way up the roast
- Toss in a bay leaf, place the Bell pepper rings on the top of the roast, cover and set it on low 8 hours or High 6 hours.

This is the kind of roast I love, thanks for posting. I added it to the crockpot slowcooker group. Robertg started that group, if you don't know him, you should, he is a hoot.
