Ingredients
  • 1 Beef pot roast 1.5 – 3 lbs.
  • Baby Red potatoes (I use a lot 15 - 20)
  • Rainbow Carrots cut into pieces (Trader Joe’s) or baby carrots
  • 1 Red onion cut into large chunks
  • Salt/Pepper to taste
  • 2 Garlic cloves chopped
  • Beef broth/Water to cover
  • Bay leaf
  • Red, Yellow, or Orange Bell Pepper cut into rings
  • Seasoning to taste: I make my own dry blend
  • Basil
  • Rosemary
  • Thyme
  • Paprika
  • Ginger
  • White pepper

Directions
  1. After chopping up the carrots/onion, place the potatoes, and carrots on the bottom of the Crock Pot.
  2. Put a light dusting of your seasoning over them and add the garlic.
  3. Place the roast on top of the veggies, dust the meat with seasoning
  4. Pour the Broth/Water carefully around the edges half way up the roast
  5. Toss in a bay leaf, place the Bell pepper rings on the top of the roast, cover and set it on low 8 hours or High 6 hours.

Ok is that a roasting bag in the crockpot?? I have never used a bag in the crockpot......is it for cleanup or does it help with the flavoring??

anyway this looks like a great recipe.........I have a buffalo roast I will try it on.....

I added your recipe to a group called "crockpots are cool again" I hope you don't mind. I've never used the bags, though that does sound good, not having to clean up all the goo left behind. I might give them a go.


YUMMY! love the clean up idea.....my husband has ruined many a crock pot by using a industrial scratch pad on the liner and creating hairline scratches that only increase the sticking capabilities of food stuffs. This would save me!


A cooking bag for the crockpot? Love it! I have to check our our TJ's to see if they carry those carrots...a fave veg of mine. Great post - thanks!


This sounds really good. I am not a fan of peppers so I will have to leave them out but every thing else sounds devine. I like the cooking bag idea also!
