How to make it

  • In a small pan heat: olive oil and cook: minced onion,minced carrot and minced celery for about 10 minutes
  • Add: tomato sauce, shredded prosciutto ham and capers and cook for 25 minutes, stirring occasionally. Makes 1 1/2 cup sauce
  • Veal: Dip the chops into flour and sprinkle with salt and pepper. Sauted in: 1/3 cup of butter for 3 minutes on each side, or until lightly browned. Add the mushroom sauce, cover and cook over low heat for 20 minutes.
  • Serve with bread : does wonders if any sauce left

    Veal isn't easy to get hold of near my home!
