Chilli Lime and Gin Marinated Oysters

- juice of 1 lime shopping list
- 1 tsp finely chopped lime zest shopping list
- 1 oz gin shopping list
- ½ tsp finely chopped ginger shopping list
- 1 tsp mirin shopping list
- 1 tsp white sugar shopping list
- ½ bird's eye chilli finely chopped shopping list
- 2 dozen rock oysters shopping list
How to make it
- Place all the above ingredients in a jar, cover with lid and shake vigorously.
- Take teaspoon and drizzle small amount over each oyster just before serving.
- For a more intense flavour; spoon over oysters one hour before serving.
- Note that this recipe is intended to have a fair bit of kick, if it is too spicy remove the seeds from the chilli before chopping, alternatively if it is too alcoholic hold back on half the gin.

I just made this and ate all the yummy oysters. Usually, I just have them with lime just and salt but this recipe spiced it up a bit. The gin gave it a shooter feel and yet it did not detract from the oystery goodness!
