How to make it

  • Cook bacon until crisp in a large Dutch oven (12 quarts or more). Remove and retain cooked bacon. Add 5 quarts water to drippings in pot.
  • Add smoked sausage to the pot and bring to a boil. Boil until water appears milky.
  • Add onion, carrots, celery, chicken parts, salt and pepper to pot. Return to a boil and cook until chicken is done.
  • Remove chicken from pot. Remove and discard skin and pull the meat from the bones. Discard bones. Shred the chicken meat and return meat to the pot.
  • Crumble bacon into the pot.
  • Add hot sauce to taste.
  • Add uncooked rice and bring to a boil. Reduce heat to simmer and cook until rice is done. Watch the pot carefully and add additional water, if necessary.
  • Serve hot. Sweet iced tea, pickled okra and Banana Pudding dessert complete a great Southern meal. Sour mash whiskey afterwards is sure to please!

    Oh my!!! This is my new favorite dish! I made a pot of this tonight for dinner and it is to die for. The bacon grease really makes this dish.

    I halved the recipe and still ended up with way more than I could ever eat so my neighbors will be lovin me...
