  • 2lbs boneless chicken breasts or thighs
  • 1 whole chicken butterflied
  • 6 broiler chicken halves
  • Lebanese Marinade:
  • 4-6 garlic cloves,finely minced
  • 1/4 to 1/2c fresh lemon juice
  • 2t fresh thyme,chopped
  • 1t paprika
  • 1/4-1/2t cayenne pepper
  • 1t salt
  • 1/2t black pepper
  • 1/2t olive oil
  • Turkish Marinade:
  • 1c plain yogurt
  • 1Tbs. paprika
  • 1t cayenne pepper
  • 4 garlic cloves
  • 1t ground cinnamon or 1Tbs ground cinnamon
  • 1 lg. lemon,juice of
  • salt to taste
  • fresh ground pepper
  • Moroccan Marinade:
  • 1Tbs paprika
  • 2t. ground cumin
  • 1/2t cayenne pepper
  • 1tsp ground ginger
  • 1/2c unsalted butter,melted or olive oil
  • 1 lg. lemon,juice of
  • salt to taste
  • fresh ground pepper
  • Egyptian Marinade:
  • 1/2c olive oil
  • 2Tbs. ground coriander
  • 1 onion,grated
  • 3 garlic cloves,finely minced
  • 1tsp cayenne pepper

Directions
  1. If using boneless chicken pieces,cut into 1" cubes and place in shallow non-reactive container;If using whole birds,butterfly them;if using broiler halves,leave whole;select one of the marinades,then combine the ingredients for it in a bowl and pour over chicken;cover and marinate in refrigerator 6 hours to overnight.
  2. Bring meat to room tem;meanwhile prepare grill or broiler
  3. Remove meat from marinade,reserving the marinade;if using chicken cubes thread onto skewers,butterflied or halved birds on the grill rack or a broiler pan and grill or brol until cooke thru,basting with reserved marinade.
  4. Cookin time will depend on size of poultry pieces;do not let meat become dry.
  5. Whole fryer(3-4 lbs.) 60-70 mins
  6. Whole Roaster(5-7lbs.) 22 mins a lb.
  7. Butterflied whole chicken(3-5lbs)45-50 mons
  8. Breast half,bone in(6-8 oz)10-15 mins. a side
  9. Breast half,boneless(4oz) 8-10 mins. a side (6-8 oz) 10-15 mins. a side
  10. Drumsticks(4oz) 8-12 mins a side
  11. Wings(2-3oz) 8-12 mins a side.
  12. Remove from oven when meat thermometer reads 175-180

Just had the chicken with the Moroccon marinade. The chicken came out perfect. The flavor was a little bland and I think it was because I used oil instead of butter.(spices didn't "stick") What was amazing was how tender and juicy it came out. Having the Turkish one tomorrow. Great post!!!


Just had Turkish OMG this is the tastiest chicken marinade I have had in a long time!! This gets 10 forks!!! I gotta tell you how much I enjoy all your recipes they are great. I made this tonight using the Turkish marinade and it was very good! I only used 1 tsp of cinnamon and I'm glad I did or it would of been way too much! I also only used 1/2 tsp of the cayenne pepper because I didn't want it to be spicy. This tasted very authentic, much like a chicken dish I had at a Turkish cafe once! I'll have to try the Moroccan version next time! I added a photo.
