Buttermilk Fried Corn

- 3 cups fresh corn kernels shopping list
- 2 1/4 cups buttermilk shopping list
- 1 cup all purpose flour shopping list
- 1 cup cornmeal shopping list
- 1 teaspoon salt shopping list
- 1 1/2 teaspoon pepper shopping list
- canola oil shopping list
How to make it
- Stir together corn and buttermilk; let stand 30 minutes; drain.
- Combine flour and next 3 ingredients in a large heavy duty zip top plastic bag.
- Add corn to flour mixture, a small amount at a time, and shake bag to coat.
- Pour oil to a depth of 1 inch in a dutch oven; heat to 375 degrees.
- Fry corn, in small batches, 2 minutes or until golden.
- Drain on paper towels.
- Serve immediately.
- Yield: 3 cups

Oh how I LOVE fried corn - I've never tried soaking it in buttermilk first...bet that makes it sweet and juicy! Great post, Zena!!
