I like to make these buttermilk pancakes the night before and by doing so the batter seems to improve. Get up the next morning, give the mixture a quick stir and your set to go.

Ingredients
  • 3 eggs
  • *If I make these to use that same day, I sometimes separate the whites from the yolks and whip the whites to stiff peaks. This makes the pancakes very light and fluffy.
  • 2 cups all-purpose flour
  • 2 tsps. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/4 cup sugar
  • 2 cups buttermilk
  • 5 Tbsps. melted butter

Directions
  1. Beat eggs, add flour, baking powder, soda, salt and sugar.
  2. Mix well.
  3. Add buttermilk and melted butter.
  4. Mix again.
  5. Now batter can be refrigerated for later use.
  6. Lightly oil griddle and get it good and hot.
  7. Test heat with a dot of batter.
  8. When griddle is hot, ladle on batter, spreading thin.
  9. Bubbles will form on top side of pancake, cook til bubbles pop and pancake begins to appear dry.
  10. Flip and cook other side until lightly browned.
  11. Serve with butter and syrup.
  12. *Sometimes I add bananas or blueberries to this pancake mixture but not until the next morning.

I can do that, love pancakes, yours looks so pretty. Great post.

How neat!

I had to print this out and make for tomorrow morning - if I can get to the store to pick up some buttermilk! I love the idea of having the batter all ready in the morning...great post, and thank you!

Love pancakes..this sounds delicious!

What a great idea, having the batter ready for the next morning! Wonderful.

Sunset had an overnight pancake batter I used to use and love...and we all liked it a lot...but I am out of the habit of making breakfast for a few years now...no little child any more. Good of you to share this because I remember the aged batter was really wonderful!

Oh so good......I love pancakes..

Sunday morning rush for church just got easier! Great to be able to make it the nite before. I'd add blueberries,(plop them on after you put the batter on the griddle) and top with lemon sauce! Yum-o. Thanks!

My DH was very happy for the all ready batter in the fridge waiting for him to make some yummy pancakes.(He's the Sunday morning cook). We did add the blueberries and I made some lemon sauce and they were outstanding. This one is a 5 and a keeper!

Made these for my sleep-til-noon teens today, and did the egg separated thingy, 'cause it was spur of the moment. They turned out fabulous and fluffy. Gave son lesson on pancakes101. He watched me make the batter, and then he cooked them up. We'll be using this again and again. TY
