Anyone who has ever visited the La Brea tar pits in Los Angeles will understand how this great-tasting hors d'oeuvre got its name. The recipe came to us from The Gourmet Cookbook, and it's a party favorite.

Ingredients
  • 4 pounds chicken wings, split at joint and wing tips discarded
  • 1 cup soy sauce
  • ½ cup dry red wine
  • ½ cup plus 1 tablespoon sugar
  • ¼ teaspoon ground ginger

Directions
  1. Cut off wing tips, reserving them for another use, and halve wings at joint. Arrange wings, skin sides down, in a roasting pan large enough to hold them in one layer.
  2. In a small saucepan heat remaining ingredients over moderately low heat, stirring, until sugar is dissolved and pour evenly over wings. Bake wings in middle of oven 45 minutes. Turn wings over and bake until cooking liquid is thick and sticky, about 45 minutes to 1 hour more.
  3. Transfer wings with tongs to a platter.

Great pic. I will have to make these and hope they turn out as pretty as your picture of the wings. I guess I will be "winging" it. JJ

Love wings, must give your recipe a try. Thanks for sharing it with everyone.

I made these years ago. They turned out great. Thanks for the reminder

These look great. Not too sweet. Looks like I found my Super Bowl party dish !

I'm going to try these over the weekend ~ I'm going to have to make some using chicken tenders as well for a few family members who have issues with chicken wings ~ poor little wings! ;)
Thanks once again Lillyann for sharing

These look great Lillyann, will try them Saturday for our playoff game, and ucred2, I know what you mean, I have a 16 year old who won't eat meat off the bone!!!(help me Lord...)
Thanks for a great post.
Just served these, they are fabulous--the whole family loved them, one son want it again with extra sauce to put over rice. This recipe is a keeper.

These just sound amazing and I will make them this weekend!! Thanks. K

I just this minute stumbled upon this recipe. Too late, I just got done making Buffalo Wings for the football games. These are the very next wings I will make. One question: Do you really have to flip them? If I place them skin side up I really shouldn't have to flip them.~~~~~Sas

Hi all,
I'll take it as a compliment that my recipe is here but it IS mine and I was given credit for it by Gourmet. This slightly different version is the original and still the best. Good luck!:

La Brea Tar Pit Chicken Wings

1 cup soy sauce (low sodium is OK)
½ cup hearty red wine (cheap is OK)
9 tbsp. sugar
¼ tsp. dry ginger
2 packages chicken wings (approx. 24)

Preheat oven to 375°F.
Cut wings into 3s (discard tips or use for stock) and put into a 9 x 13 foil-lined pan.
Mix other ingredients over low heat until sugar is dissolved; pour over wings.
Bake for 45 minutes, turn and check after another 30 or 45 minutes.

The recipe got its name from the La Brea Tar Pits because I was living in LA when I started making them. The sauce doesn’t have to be thick, sticky or look like tar to be delicious … but the name stuck. The recipe has been published in Gourmet magazine along with an Editor’s Note: “We LOVE these wings!” A slightly different version of the recipe is on pg 55 of The Gourmet Cookbook. mmm_in_ma
