Motor Oil Chicken – Blackstone Griddle Version
    Prep 10 min
    Cook 20–25 min
    Serves 6

    Ingredients
    3/4 cup
    white vinegar
    1/2 cup
    vegetable or olive oil
    1/4 cup

    Instructions
    1
Make the marinadeWhisk vinegar, oil, water, garlic, brown sugar, Worcestershire, hot sauce, mustard, and salt until fully combined.
    2
Prep the chickenPat chicken dry. Reserve about 1/3 of the marinade for basting later.

Heat the BlackstoneSet griddle to medium‑high heat (around 400°F). Add a thin layer of oil.
    4
Initial cookPlace chicken on the griddle. Cook 6–8 minutes per side until juices run clear and internal temp reaches 165°F.
    5
Baste with sauceBrush chicken generously with the reserved marinade.
    6
Finish on the griddleCook an additional 3 minutes per side to caramelize the sauce and create that signature 'motor oil' glaze.
    7
ServePlate the chicken and offer any remaining sauce for dipping.

Thighs work best — they stay juicy even with the vinegar‑heavy marinade.

If you want extra char, bump the heat for the last minute.

Pair it with corn on the cob and potato salad, just like the original recipe suggests.
