Ingredients
  • 1 Tbl EVOO
  • 3/4 Cup red bell pepper strips
  • 1/2 cup sliced onion, separated into strips
  • 2 Garlic cloves, crushed
  • 1 3/4 C thinly sliced zucchini
  • 11/2 C thinly sliced summer squash
  • 1 3/4 C chopped plum tomoato
  • 1/4 C thinly sliced fresh basil (or dried to taste)
  • 1 tsp lemon pepper
  • 1/4 tsp salt
  • 1/4 C grated Parmesan cheese

Directions
  1. Heat oil in a large skillet over medium-high
  2. Add bell pepper, onion and garlic and saute 2-3 minutes
  3. Add squashes and sautee until crisp tender, about 5 - 6 minutes
  4. Add tomato, basil, lemon pepper and salt
  5. Saute 1 minute or until heated through
  6. Remove from heat and sprinkle with cheese
  7. Serve immediately
  8. 4 1 cup servings
  9. 2 WW points
  10. 100 calories
