Garden Saute

- 1 Tbl EVOO shopping list
- 3/4 Cup red bell pepper strips shopping list
- 1/2 cup sliced onion, separated into strips shopping list
- 2 garlic cloves, crushed shopping list
- 1 3/4 C thinly sliced zucchini shopping list
- 11/2 C thinly sliced summer squash shopping list
- 1 3/4 C chopped plum tomoato shopping list
- 1/4 C thinly sliced fresh basil (or dried to taste) shopping list
- 1 tsp lemon pepper shopping list
- 1/4 tsp salt shopping list
- 1/4 C grated parmesan cheese shopping list
How to make it
- Heat oil in a large skillet over medium-high
- Add bell pepper, onion and garlic and saute 2-3 minutes
- Add squashes and sautee until crisp tender, about 5 - 6 minutes
- Add tomato, basil, lemon pepper and salt
- Saute 1 minute or until heated through
- Remove from heat and sprinkle with cheese
- Serve immediately
- 4 1 cup servings
