I was taught this technique by an Italian chef who came to Melbourne in 1956 for the Olympic Games cooking for the Italian team ,then stayed on as a migrant .He cooked in my godparents restaurant for 20 years and loved showing me different dishes when I worked as his dish hand during holidays .So many carbonaras today have added cream or they add cooked chicken ,or a miriad of other ingredients ,in fact in many dishes the simple origin has been forgotten .When done correctly with top quality ingredients ,nothing comes near this dish for sublime flavour !!
