Chicken Waikiki Beach

- 8 (up to 12) boneless, skinless chicken breast halves shopping list
- 1/2 cup all-purpose flour shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon seasoned ground black pepper (or plain if you prefer) shopping list
- 1 (20 ounce) can sliced pineapple in juice shopping list
- 2 tablespoons cornstarch shopping list
- 1/3 cup sugar (the original recipes calls for 1 cup. WAY too sweet!) shopping list
- 3/4 cup cider vinegar shopping list
- 1 tablespoon soy sauce shopping list
- 1/4 teaspoon ground ginger shopping list
- 1 chicken bouillon cube shopping list
- 1 large green pepper sliced into rings shopping list
How to make it
- Combine flour, salt and pepper.
- Dredge chicken breasts in seasoned flour.
- In large skillet, heat a bit of vegetable oil.
- Brown chicken breasts on both sides. Arrange in greased baking dish in a single layer.
- Drain pineapple juice into measuring cup. Add enough water to juice to measure 1 1/4 cups.
- Whisk cornstarch into juice.
- In saucepan, combine sugar, juice, vinegar, soy sauce, ginger and bouillon cube. Bring to a boil and cook 2 minutes.
- Pour over chicken.
- Bake at 350 degrees for 30 minutes.
- Remove from oven. Top chicken with green pepper rings and sliced pineapple.
- Return to oven and bake 20 to 30 minutes or until chicken juices run clear.
