Ingredients

How to make it

  • Combine flour, salt and pepper.
  • Dredge chicken breasts in seasoned flour.
  • In large skillet, heat a bit of vegetable oil.
  • Brown chicken breasts on both sides. Arrange in greased baking dish in a single layer.
  • Drain pineapple juice into measuring cup. Add enough water to juice to measure 1 1/4 cups.
  • Whisk cornstarch into juice.
  • In saucepan, combine sugar, juice, vinegar, soy sauce, ginger and bouillon cube. Bring to a boil and cook 2 minutes.
  • Pour over chicken.
  • Bake at 350 degrees for 30 minutes.
  • Remove from oven. Top chicken with green pepper rings and sliced pineapple.
  • Return to oven and bake 20 to 30 minutes or until chicken juices run clear.

    this is great- I remember when my mom made this years ago- on a rainy day. I was three or four years old. I wish she would make it again- oh but hey, now I can make it! Thank you so much for posting!
