Chicken Waikiki Beach Recipe
I took a recipe from one of those "cheapie" cookbooks and tweeked it to my own liking. Perfect for a buffet or pot luck. Or everyday "eats".

Ingredients
  • 8 (up to 12) boneless, skinless chicken breast halves
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon seasoned ground black pepper (or plain if you prefer)
  • 1 (20 ounce) can sliced pineapple in juice
  • 2 tablespoons cornstarch
  • 1/3 cup sugar (the original recipes calls for 1 cup. WAY too sweet!)
  • 3/4 cup cider vinegar
  • 1 tablespoon soy sauce
  • 1/4 teaspoon ground ginger
  • 1 chicken bouillon cube
  • 1 large green pepper sliced into rings

Directions
  1. Combine flour, salt and pepper.
  2. Dredge chicken breasts in seasoned flour.
  3. In large skillet, heat a bit of vegetable oil.
  4. Brown chicken breasts on both sides. Arrange in greased baking dish in a single layer.
  5. Drain pineapple juice into measuring cup. Add enough water to juice to measure 1 1/4 cups.
  6. Whisk cornstarch into juice.
  7. In saucepan, combine sugar, juice, vinegar, soy sauce, ginger and bouillon cube. Bring to a boil and cook 2 minutes.
  8. Pour over chicken.
  9. Bake at 350 degrees for 30 minutes.
  10. Remove from oven. Top chicken with green pepper rings and sliced pineapple.
  11. Return to oven and bake 20 to 30 minutes or until chicken juices run clear.
