CAULIFLOWER CHEESE

- 1 large cauliflower, broken into florets shopping list
- 1-1/4 cups milk shopping list
- 3 tablespoons flour shopping list
- 4 tablespoons butter shopping list
- 1/2 teaspoon mustard powder shopping list
- 1/8 teaspoon nutmeg shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 8 ounces quality cheddar cheese, grated and divided (I use Tillamook brand Vintage White Extra Sharp) www.tillamookcheese.com shopping list
- 1/2 cup breadcrumbs (optional) shopping list
How to make it
- Preheat oven to 450F
- Boil cauliflower in salted water until just tender, 10-15 minutes
- Drain well in colander and place in a buttered baking dish
- In a saucepan add the milk, butter, and flour and while whisking continuously heat until mixture is smooth, thickens, and comes to a boil
- When mixture boils continue to cook and whisk for an additional two minutes
- Remove from heat and add mustard powder, nutmeg, salt, pepper and roughly two thirds of the grated cheese, stirring until smooth
- Pour sauce over cauliflower
- Mix breadcrumbs with remaining cheese and sprinkle over the top
- Bake 25 minutes until golden brown and bubbly
- Serve immediately
