Ingredients
  • 1 large cauliflower, broken into florets
  • 1-1/4 cups milk
  • 3 tablespoons flour
  • 4 tablespoons butter
  • 1/2 teaspoon mustard powder
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 8 ounces quality cheddar cheese, grated and divided (I use Tillamook brand Vintage White Extra Sharp) www.tillamookcheese.com
  • 1/2 cup breadcrumbs (optional)

Directions
  1. Preheat oven to 450F
  2. Boil cauliflower in salted water until just tender, 10-15 minutes
  3. Drain well in colander and place in a buttered baking dish
  4. In a saucepan add the milk, butter, and flour and while whisking continuously heat until mixture is smooth, thickens, and comes to a boil
  5. When mixture boils continue to cook and whisk for an additional two minutes
  6. Remove from heat and add mustard powder, nutmeg, salt, pepper and roughly two thirds of the grated cheese, stirring until smooth
  7. Pour sauce over cauliflower
  8. Mix breadcrumbs with remaining cheese and sprinkle over the top
  9. Bake 25 minutes until golden brown and bubbly
  10. Serve immediately

This looks great! We always had this when I was growing up, though a plainer version with, as I recall a velveeta cheese sauce. I haven't made it in a long time but your recipe looks really better than ours and I will try it soon. Thanks!

Love cauliflower cheese I make it with broccoli too!
sometimes I grate cheese mix it with mayonnaise, crushed garlic, nutmeg and grated onion! hmmmm

the mayo makes it brown well
