How to make it

  • Put everything except kale greens in a soup pot.
  • Bring to a boil, stirring occasionally.
  • Reduce heat to low. Cover and simmer 50 minutes.
  • Add kale greens.
  • Simmer 10 minutes longer to heat through.

    It is awesome and everyone loved it. I used a little more carrot and celery, added mushrooms and substituted fresh spinach at the end instead of the kale. (couldn't find the canned kale to save my life) I simply tore the leafy spinach with my fingers and added it until it looked like a good amount. I am not a fan of the sodium content of the bouillon cubes so next time I will try low sodium organic vegetable broth. This will definitely be made often!!

    I made your soup and it was delicious! I froze some containers of it, too as its going to be great to heat up when it gets chilly in L.A.! I stopped by for a second time just to let you know that its going to be a family favorite in our home. Thank you once again for the wonderful soup recipe!

    Great winter soup..for now and then in a couple months is going to be great spring soup then after that it's...well you get the idea. Where do you buy your barley at? How is it sold?
