How to make it

  • Line shallow baking sheet with foil and spray with cooking spray.
  • Preheat oven to 350 F.
  • Slice bagels in half and cut out centers to produce holes about 1 1/2 inches in diameter.
  • Butter each bagel half and place buttered side down on prepared baking sheet.
  • Crack one egg into each bagel hole.
  • Top each egg with salt and pepper to taste.
  • Bake until eggs are set (I like them runny, my family likes them firm)
  • Top each egg-bagel with a cheese slice and return to oven to melt cheese.
  • Serve hot.

I had this for lunch today and I really liked it! The only thing I did differently was I had some shredded cheese open so that is what I used. I cooked mine for 12 minutes, put the cheese on and then cooked for another 3. I liked how the bagel bottom got crispy from the butter. I added some pictures and a thread in IMI 3/2/14.

My kids like bagels and they love eggs..
We do the bird in a nest, which is bread with a hole cut in it and then an egg cooked in the hole on stovetop.
    We will try this soon...
