Ingredients

How to make it

  • Cook bacon in large frying pan until not quite crisp. Drain on paper towels.
  • In remaining bacon drips in the same pan, saute onion, pepper, celery for a couple minutes until it starts to wilt. You're just looking to take a bit of color off the veggies, not cooking until done or anything.
  • Stir in the olive oil, thyme, salt, pepper, red pepper flakes and peas.
  • Add broth and rice, bring to a boil. Cover immediately.
  • Reduce heat to low, simmer for 20 minutes or until rice is tender.
  • Fluff with fork, garnish with green onion, serve.
  • ENJOY!

    I made this last night and it was just wonderful! I don't always like black eyed peas but prepared like this I'd eat a lot more of them. I will surely make this again, especially for New Years Day (for the Jewish New Year I'll leave out the bacon)... thanks for this one!
