Ingredients
  • 3/4 pound thick sliced peppered bacon--cut in 1/2 inch pieces
  • 1 large yellow onion, diced
  • 1 green pepper, diced
  • 2 ribs celery, diced
  • Sliced green onion, chopped parsley for garnish
  • 1 1/2 Tablespoons olive oil
  • 1 teaspoon dried thyme
  • 3/4 teaspoon salt
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes (more to taste if you like)
  • 1 cup raw long grain white rice
  • 1 (15 oz) can black eyed peas, rinsed & drained
  • 2 1/2 cups chicken broth or stock

Directions
  1. Cook bacon in large frying pan until not quite crisp. Drain on paper towels.
  2. In remaining bacon drips in the same pan, saute onion, pepper, celery for a couple minutes until it starts to wilt. You're just looking to take a bit of color off the veggies, not cooking until done or anything.
  3. Stir in the olive oil, thyme, salt, pepper, red pepper flakes and peas.
  4. Add broth and rice, bring to a boil. Cover immediately.
  5. Reduce heat to low, simmer for 20 minutes or until rice is tender.
  6. Fluff with fork, garnish with green onion, serve.
  7. ENJOY!
