Hoppin Johns Rice

- 3/4 pound thick sliced peppered bacon--cut in 1/2 inch pieces shopping list
- 1 large yellow onion, diced shopping list
- 1 green pepper, diced shopping list
- 2 ribs celery, diced shopping list
- Sliced green onion, chopped parsley for garnish shopping list
- 1 1/2 Tablespoons olive oil shopping list
- 1 teaspoon dried thyme shopping list
- 3/4 teaspoon salt shopping list
- 3/4 teaspoon black pepper shopping list
- 1/2 teaspoon crushed red pepper flakes (more to taste if you like) shopping list
- 1 cup raw long grain white rice shopping list
- 1 (15 oz) can black eyed peas, rinsed & drained shopping list
- 2 1/2 cups chicken broth or stock shopping list
How to make it
- Cook bacon in large frying pan until not quite crisp. Drain on paper towels.
- In remaining bacon drips in the same pan, saute onion, pepper, celery for a couple minutes until it starts to wilt. You're just looking to take a bit of color off the veggies, not cooking until done or anything.
- Stir in the olive oil, thyme, salt, pepper, red pepper flakes and peas.
- Add broth and rice, bring to a boil. Cover immediately.
- Reduce heat to low, simmer for 20 minutes or until rice is tender.
- Fluff with fork, garnish with green onion, serve.
- ENJOY!

I made this last night and it was just wonderful! I don't always like black eyed peas but prepared like this I'd eat a lot more of them. I will surely make this again, especially for New Years Day (for the Jewish New Year I'll leave out the bacon)......more
