Ingredients
  • 16 oz. bag of pinto beans
  • a chunk of fat back, salt pork or bacon, about 3 oz. or 2 Tbs. bacon grease
  • water
  • salt to taste

Directions
  1. Pour about 1/4 of the bag of the beans out onto the litchen table. Look at them very carefully and pick out anything that is not a bean or any broken beans.
  2. Repeat until you have done this with the whole bag.
  3. Rinse the beans well with warm water.
  4. Put the beans in a large pot and cover with enough water that there is about 3 inches above the beans.
  5. Cook on high and bring to a boil for about 10 minutes.
  6. Pour off this water and repeat step number 4. Bring the beans back to a full rolling boil ,add the meat.
  7. Lower the temperature to medium high and let them cook for about 4-5 hours or until they are very tender.
  8. Keep a good watch on them and try to keep the same amount of water by adding COLD water to the pot every once in a while.

Good grief woman, are you trying to starve me to death? I came across this at 2:47 am and started craving pinto beans, corn bread, and some chow chow of course on the side. Yummmmmmmmm!


LOL, Dari. We have this about once a week,sometimes twice a week here. I haven't had any chow chow since I was a kid. My Daddy always had a jar sitting on the table to go with the "beans & taters" LOL


Saturday night supper at Aunt Mabel and Uncle Estins included a huge mess of pinto beans, spoon bread, big slices of tomatoes, cukes and onions, corn relish, and spiced apples. Good times at their house. I can still hear the teasing I got for eating a "green apple" and pukering up for hours. Of course, my first foray into the hen house was a standing joke for years. "Afraid of a little chicken, you city girl. For Shame!"


I love just about any kind of bean, but pintos are my favorite. This sounds just perfect to me. Only problem is, it's getting harder and harder to find fat back or salt pork where I live. Too many "healthy" eaters. (Their food must taste terrible!) LOL


Man, I crave pintos since I moved up here in Jersey...Going to have to cook some just for me! Does anyone besides me put a little sugar in them?


There is nothing quite like a pot of good ole pinto beans! And your recipe sounds like a "good ole pot"!! I love them! Of course, they call for some good cripsy cornbread. Oh my!


Now your talking!! This is probably one of my favorite things.....The only other thing that would make it better is a side of fresh turnip greens with vinegar!


I love mine with sweet corn bread and green onions!! Oh and throw in some fried potatoes and its a deal!
