Scallops And Asparagus With Sake Recipe
Restaurant quality meal at home. Presents beutifully, tastes like heaven. Another WW that doesn't taste like it from "Take Out Tonight" 2 points....yes! 2 points! 124 calories per serving!

Ingredients
  • 2 tsp canola or EVOO
  • 1 lb sea scallops with muscle removed
  • 2 tsp peeled, minced fresh ginger
  • 2 cloves garlic, minced
  • 1/2 lb of asparagus, cut diagonally into 1 1/2" pieces
  • 1 red bell pepper, seeded, thinly sliced
  • 1 yellow bell papper, seeded, thinly sliced
  • 1 carrot cut into matchstick strips
  • 2 Tbl Sake
  • 1 Tbl reduced sodium soy sauce
  • 1 tsp seasoned rice vinegar
  • 4 scallions, thinly sliced on the diagonal, white part only

Directions
  1. Heat a large nonstick skillet on high, swirl in 1 tsp oil
  2. Add scallops, cook, turning, until golden brown outside and just opaque inside, about 1 minute
  3. Transfer to a plate, cover and keep warm
  4. Return the pan to the heat, swirl in remaining 1 tsp oil; add ginger and garlic, cook until fragrant about a minute.
  5. Add asparagus and peppers and cook until crisp tender...about 3 to 4 mintues
  6. Stir in Sake, soy and vinegar; bring to a boil.
  7. Cover over high heat, stirring occasionally until flavors are blended.
  8. Return scallops to the pan, add scallions and stir until heated through
  9. Serve over rice
