How to make it

  • Heat a large nonstick skillet on high, swirl in 1 tsp oil
  • Add scallops, cook, turning, until golden brown outside and just opaque inside, about 1 minute
  • Transfer to a plate, cover and keep warm
  • Return the pan to the heat, swirl in remaining 1 tsp oil; add ginger and garlic, cook until fragrant about a minute.
  • Add asparagus and peppers and cook until crisp tender...about 3 to 4 mintues
  • Stir in Sake, soy and vinegar; bring to a boil.
  • Cover over high heat, stirring occasionally until flavors are blended.
  • Return scallops to the pan, add scallions and stir until heated through
  • Serve over rice
