Scallops And Asparagus With Sake

- 2 tsp canola or EVOO shopping list
- 1 lb sea scallops with muscle removed shopping list
- 2 tsp peeled, minced fresh ginger shopping list
- 2 cloves garlic, minced shopping list
- 1/2 lb of asparagus, cut diagonally into 1 1/2" pieces shopping list
- 1 red bell pepper, seeded, thinly sliced shopping list
- 1 yellow bell papper, seeded, thinly sliced shopping list
- 1 carrot cut into matchstick strips shopping list
- 2 Tbl sake shopping list
- 1 Tbl reduced sodium soy sauce shopping list
- 1 tsp seasoned rice vinegar shopping list
- 4 scallions, thinly sliced on the diagonal, white part only shopping list
How to make it
- Heat a large nonstick skillet on high, swirl in 1 tsp oil
- Add scallops, cook, turning, until golden brown outside and just opaque inside, about 1 minute
- Transfer to a plate, cover and keep warm
- Return the pan to the heat, swirl in remaining 1 tsp oil; add ginger and garlic, cook until fragrant about a minute.
- Add asparagus and peppers and cook until crisp tender...about 3 to 4 mintues
- Stir in Sake, soy and vinegar; bring to a boil.
- Cover over high heat, stirring occasionally until flavors are blended.
- Return scallops to the pan, add scallions and stir until heated through
- Serve over rice
