Channel lemon squares

- CRUST: shopping list
- 1/2 cup (1 stick) (113 grams) unsalted butter, room temperature shopping list
- 1/4 cup (25 grams) confectioner's (powdered or icing) sugar shopping list
- 1 cup (140 grams) all purpose flour shopping list
- 1/8 teaspoon salt shopping list
- FILLING: shopping list
- 140 grams cream cheese, room temperature shopping list
- 100 grams granulated white sugar shopping list
- 1/2 cup fresh lemon juice shopping list
- 2 large eggs shopping list
- 1 tablespoon grated lemon zest shopping list
- Topping: shopping list
- Channel logo :) shopping list
- powder sugar shopping list
How to make it
- Preheat oven to 350 degrees F and place rack in center of oven. Cover with foil and grease with butter an 8 x 8 inch (20 x 28 cm) pan.
- For crust
- In the bowl of your electric mixer, or with a hand mixer, cream the butter and sugar until light and fluffy. Add the flour and salt and beat until the dough just comes together. Press into the bottom of your greased pan and bake for about 20 minutes, or until lightly browned. Remove from oven and place on a wire rack to cool while you make the filling.
- Filling:
- Preheat oven to 375F.
- Beat the cream cheese until smooth. Add sugar and beat until incorporated. Add eggs, one at a time, and beat until combined. Add remaining ingredients and process until well blended and smooth. Pour filling over baked crust and bake for approximately 25 - 30 minutes or until filling is set. Transfer to a wire rack to cool and then cover and refrigerate until well chilled, at least an hour.
- Take it out from the pan and place on a cutting board and cut into squares.
- I found some rubber letters and numbers that belong to my little kid. I spitted the O letter into half lengthwise and then inverted them and used an UHU to stick them together to form the channel logo. I placed the logo over each square and sprinkle some powder sugar over and then left the logo. I had to deliver the samples the second day and that was the only way available in such short time.
