Spicy Potato Soup Recipe
I have never made this soup..... its from the Taste of Home Magazine... the recipe comes from Mexico... can be made to be real spicy with lots of hot pepper

Ingredients
  • 1 pound ground beef
  • 4 cups cubed peeled potatoes, 1/2 inch cubes
  • 1 small onion chopped
  • 3 cans tomato sauce (8 ounces each)
  • 4 cups water
  • 2 teaspoons salt
  • 1 1/2 teaspoons pepper
  • 1/2 to 1 teaspoons hot sauce (more if you like it)

Directions
  1. In a dutch oven or large kettle, brown ground beef; Drain.
  2. Add potatoes, onion, and tomato sauce.
  3. Stir in water, salt, pepper and hot sauce.
  4. Bring to a boil.
  5. Reduce heat and simmer for 1 hour or until the potatoes are tender and the soup has thickened.
  6. 6 to 8 servings.

Alterations


This recipe is delicious. I crank op the spice, but I also add alittle sugar,cilantro and Corn.

I have tried shredded chicken breast instead of beef and just a veggie version.
