Ingredients
  • 8 cups baby green beans, trimmed
  • 1 cup)walnuts, roasted and coarsely chopped
  • ¼ cup extra virgin olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon sweet paprika
  • ½ teaspoon ground coriander
  • ¼ cup coarsely chopped flatleaf parsley
  • ¼ cup coarsely chopped coriander
  • ½ small red onion, finely chopped
  • 2/3 cup feta, crumbled

Directions
  1. Cook green beans in boiling salted water for 3-5 minutes or until tender to your taste.
  2. Drain.
  3. Refresh in iced water.
  4. Then drain again.
  5. Combine walnuts with the remaining ingredients except feta.
  6. Season to taste with sea salt and freshly ground pepper.
  7. Combine beans and walnut sauce/mixture in a bowl
  8. Sprinkle with feta.

GG walnuts an feta are some of my favorite combinations, adding green beans and lemon really turn this into a delicate light delectable treat
