Beer Bean Chicken Soup In Tortilla Bowl Recipe

Ingredients

2 cups black beans soaked overnight

4 cups broth (I used veggie b/c that is what I had)

1 large onion, chopped

2 heaping Tbsp minced garlic

5 celery tops w/ leafs, chopped

1 can beer (I used Bud Light, but a better beer wouldn't hurt)

2 boneless skinless chicken breasts, chopped

to taste:

chili powder, basil and cumin

2 heaping Tbsp minced garlic

1 can no salt added stewed tomatoes, drained

1/2 cup chopped green onions

1/2 no fat black refried beans

1 sm can diced jalapenos

large tortillas (I used whole wheat)

garlic powder

mixed greens (for lunch today I used spinach only)

Directions

Put beans and broth in crock pot

saute onion, garlic, and celery w/ cooking spray in non-stick skillet over medium heat and pour into pot

Using same skillet and heat, pour in beer, chicken, seasonings to taste and garlic

Cook for 10 minutes and pour into pot

add green onions and all the canned stuff

Cook as long as you want...I think the beans are done in under 4 hours, if not less...I cooked this all day

Spray tortilla shell metal (look at my pics) w/ cooking spray and season w/ garlic powder and press tortilla in it

cook for 10 minutes on 375F

put greens in bowl

put tortilla shell on top of greens

fill w/ bean soup
